I am going to share with you some of our families favorite stand by bread recipes. We have made our own bread since our children were small. Our daughter was baking bread when she was seven and selling it around town. She was even written up in the local paper for her bread. So we think you will enjoy these recipes immensely.
When we first started we did everything by hand. We did not use any kind of mixer. Later we invested in a Bosch and have never looked back. We also invested in a grain mill to fresh grind all our grains. All of that to say you can make each of these recipes by hand or with a mixer. Whole Wheat Honey Bread
6 c - Very warm water 110°
2/3 c - Honey
2/3 c - Canola oil
3 Tbs -Yeast
2 Tbs Sea Salt
6 Cups Hard White Wheat Flour
3Tbs Dough Enhancer (optional) makes the dough super soft
Mix all ingredients until incorporated well. Let this mixture stand for 15- 25 minutes but no more than 30. Continue to add flour to the mixture until the sides begin to peel away from the bowl (in a mixer) or until dough begins to become stiffer and not cling as much to the bowl by hand. When sides are just about cleaned begin kneading. In a Bosch knead for 9 minutes on speed 2. By hand 10-15. or until dough begins to become elastic. Place kneaded dough on oiled counter let rest for 10 min. Shape into loaves. Place dough in prepared pans. We coat ours halfway up with cooking oil. Let dough rise in pan for 30-40 min. until almost double. Bake at 350° for 30-35 min or until internal temp is 180° They will be golden brown when finished. Let cool completely on rack (never happens in our family - we always have some warm butter and honey ready for the first loaf out of the oven) then slice and enjoy.
Honey Sweet Banana Bread
Makes 1 loaf
Cream honey and butter in large bowl with electric mixer until fluffy. Beat in vanilla. Add eggs, one at a time, beating well after each addition, Combine dry ingredients in small bowl; add to honey mixture alternately with bananas, blending well. Stir in walnuts. Spoon batter into greased and floured 9x5x3-inch loaf pan. Bake in preheated 325°F oven 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack 15 minutes. Remove from pan; cool completely on a wire rack.
